Beef stew, the ultimate comfort dinner

This is a pretty delicious and relatively easy dish if you don't mind the chopping. All the credit to Stephanie Izard from Girl & the Goat.  Perfect on a cold night. 


Real life progression of the stew. Onions, garlic, fruit and wine in reduction mode. There is an entire pineapple in there!


Add the chicken stock, fish sauce, tomatoes, apple cider and other goodies. I went off grid and added chopped carrots and sliced fingerling potatoes. 


Several hours later and there you have it folks. We served ours over rice.
